The Salem-Keizer School District called up MCA Architects to design a new 27,000 sf Central Kitchen Facility that would prepare 25,000 meals per day utilizing the cook-chill concept. This process involves partially cooking the food in large quantities and then rapidly cooling it to stop the cooking process. The food is then packaged and refrigerated before being delivered to the local schools; packaging technology allows up to a one-week supply of food to be delivered at a time. The cooking process is then completed at the school, ensuring fresh hot meals for the students, who are able to select from a minimum of seven entree choices each day.
